Garlic Pesto Chicken With Pasta
2 Chicken breasts, sliced and marinated with Garlic Pesto Sauce
2 tbsp olive oil
1 pound pasta, cooked aldente
1/4 cup basil pesto
fresh basil, chopped, garnish
Parmesan cheese, garnish
salt and pepper
Heat a large skillet over medium heat. Season the breasts with salt and pepper. Sear the chicken in the olive oil until golden brown. this will take about 6-8 minutes. Add cooked pasta and pesto to the chicken and toss to coat. Serve in a large serving bowl garnished with the fresh chopped Basil and Parmesan cheese.
Garlic Pesto Sauce
3/4 cup chicken broth
1/2 cup basil leaves, fresh
3 garlic cloves
4 tablespoons Parmesian cheese
1 tablespoon olive
salt and pepper
Heat broth to almost boiling. Combine the ingredients in your blender for 2 minutes.
Marinate the chicken for 2 hours with this sauce.
Basil Pesto
2 cups basil leaves
3 garlic cloves, minced
1/2 cup olive oil
1/4 cup Parmesan cheese, grated
3 tablespoons walnuts
Chop basil leaves in your processor until they are well chopped. Add 1/4 of the walnuts, Parmesan cheese, garlic, and olive oil to the basil and blend until you have a smooth paste. Continue adding about 1/4 of the ingredients at a time until the Pesto is complete.
